Making clean instrumental cuts of songs is impossible without stems. The closest you can get is mid/side differential detection of vocals, which doesn't cut stuff very cleanly.

Well if it's a stem, then it only sounds like one instrument of the whole song.

You can only get stems from the producer/label. They don't just hand those out, it's the equivalent of jhst giving away the song. You will be hard pressed to find stems of any song, unless they are specifically giving them away for remixes or mixing/mastering practice.
