Off Topic / Changing the Background Color of a Picture

There are two things that I want to know how to do.
The first: making a picture with a white background transparent.
The second: taking a picture of something in real life and giving it a nice plain white background to make it stand out (I see this all the time on LEGO gallery sites like Brickshelf.)
I'm pretty sure I've asked something similar a while back, and you guys said you can use paint or something. I got a Mac (yes, go ahead and call me an autistic friend) so none of that for me.
Can't you use Photoshop to do these things? And if so, what exact program? Thanks.
