Or GNOME 2, after you set up your hard drives, root password etc, it'll ask you for a category of install, make sure to select Desktop, that gives you the require desktop enviornment and then you can add on individually from there such as openSSH so you can SSH into your server (it's like Remote Desktop but the command line).

Why would you use Gnome 2
If you want to use Gnome 2 for some odd reason on a server, get MATE. Gnome 2 isn't maintained anymore.

You can through Wine yes.
Just use Openbox since you still need a graphical environment.
