I'm wondering if my NAT settings could have anything to do with me not being able to host. They were set to strict last time I tried to host.

Yes, Nat is basically your ability to connect to the internet divided into sections. For best hosting ability you want your NAT to be open not closed. Moderate is OK but can sometimes cause problems
