A program that converts sound and music into notes to print out into sheet music?

Woah, as far as I know I don't think there's software for that.

Theres a program that has tons of songs already processed and you can watch the notes an learn them :)

I know Audiosurf uses a similar technique by using the tempos and beats of music to shape the curves, bumps, and drops in the road.
So I'm pretty sure there's software that does that.

Only one I can think of is Synthesia.

There are programs that let you create sheet music, and I have seen experimental software to convert audio files into midi and then print it as sheet. Naturally, these should not be used seriously. They are unstable.

I looked into this a good two years a go or more, I could do a Google but so could you lol.

EDIT: Only thing I can find right now is AmazingMIDI but it only does wav > midi. Not sure what program did midi > sheet.

This is definitely possible, just very complex.

It would be even more overcomplicated with the addition of harmony, chords, and instruments of different timbre.

No, as it would have problems differentiating the instruments from instruments that sound kind of similar, and a song with two of the same instrument would have the notes all forgeted up. It would work for a song with one instrument, though.
