Is there anyway to turn off it but still be able to turn on breaking on certain blocks?

I can destroy bricks by shooting them by pistol.
BUT I dont want them to be "destroyable"

Disable brick damage in the minigame settings.

If you want only certain bricks to break, you'll have to event them to do so.

Also to make them non breakable without a minigame you can event them with this
