What are you talking about. Google fiber is an ISP, it offers gigabit internet. When you get gigabit you get a gigabit modem and router. How do you think the speed is shown like that. They do a test off of your connection. Also there are tons of routers that do 900mbps which is basically what you're actually getting. They're not that expensive either.
I have gigabit wiring in my house. Although CAT5e isn't fully rated for 1000mbps like CAT6, CAT5e can still deliver that speed on my network. CAT6 has a significantly higher resistance to interference.
My setup has 1x30ft and 3x50ft wires, an $85 gigabit router with wireless N, and $25 switch (5 wired computers; 4 ports on router). That's only about $130 for new equipment. It's cheap.

Copper is pretty good for gigabit speeds even up to 10G with CAT6a.
