basically I created an ext4 partition and decided to mount it.
That mount-name (for lack of a better word) is pretty ridiculous and I was wondering whether it be possible to change it and how.

I am in the process of building the linux kernel from source files only, just for an interesting challenge if anyone is wondering what all this is about.

You could try changing its label from GParted.

You could also create a folder, and mount it to that folder on boot via /etc/fstab

That is not the volume label. Your label is blank seeing as the "Partition Label" field is empty.
