starting earlier means you can probably avoid having to focus the majority of your free time on it, so you are less likely to get tired and bored of it
AND, if any problems come up, you have plenty of time to find a solution. I'd say that having the whole server completely finished by the end of november at least would be a great idea. maybe october. that gives you time to be completely certain that it's actually finished
yea but if you have a big organized team of people it might be cool to host something other than just a 2-day new years server every year...

you may have noticed that I said one advantage of starting early is that you don't have to focus ALL of your time on it
