the battle(s) against Jenova in FFVII with that kick-ass battle theme.
final boss in FFVII whenever i survived that loving Supernova move twice.
Let's just say Sephiroth was the most badass enemy in any game i've ever played.

The first time I played Metroid Prime

And when I fought Prime

I had a nerdboner, and it was the single most epic boss I had ever seen.
