Cassiterite's an ore. That's the only brown thing I can think of (besides wood, but you obviously don't want to use that). You can use mud, but that would be harder. tl;dr: No stone is brown. Mudstone is

umm... try flooding it :D

also, you should probably try making an outdoor farm and then searching for plants and seeds to plant in the outside farm

make sure at least 1 person has farming (fields) enabled to build the farm, press v and move the X to a person and set their labor status under afrming to enabled

build farm next to murky pool
make sure farm is much larger than murky pool
break wall seperating farm and murky pool.
block murky pool with floodgate once everything is muddy/1/7
build farm plot and set it to grow plump helmets
profit
