I mean, don't try and do that for too many levels.
You will break into a chamber and you will have your fortress overrun with giant olms, cave crocodiles, voracious cave crawlers, blind cave ogres, forgotten beasts and giant cave spiders if you aren't careful. Did I forget anything?

there is difficulty settings, if you think about it. If it's too easy go into a haunted area. If it's too hard, go into a good area.

I have dug a lot, the only brown stone I found I couldn't use in construction.

My water system, includes flushing (Dumping all the water into carverns for re engineering) Has access to infinite water (Not during winter) provides water into farming and drinking systems.
