Because in WWI, you spent your time sitting in a trench until either you get hit by a shell, run over by a tank, or told it was your turn to hop up and get mowed down by machine gun fire.

It honestly wouldn't be much different, only there wouldn't be planes, the tanks would be slow and hardly maneuverable and 99% of the game would be spent in trenches, firing across a field at other trenches.
