A Cowboy Bebop game would be ridiculous.
I mean that in both the good and bad ways - it would be ridiculous in that it would make no sense, and it would be ridiculously awesome.

I loving loved Space Cowboys.
There's like, 3 of them being hosted now, one being Air Rivals.
Basically the same game.
