I can't quite tell, but are the bricks making the walls stacked in a brick-stack pattern?
Because if they are, adding in the odd close shade of grey in there randomly can add more colour to the cathedral, without it obviously looking silly.
You might want to just give it a test and see if you like the odd spot of different shades in a couple of places.
I find that it usually on stone-work builds, makes them look more realistic, because it would be almost impossible to make any large stone structure made with the exact same stone. If you look at old cathedrals and churches, the bricks in them are often slightly different shades as they're made from a different stone, or a tarnished stone.
It's worth a try to see if you like it.
But even without, I really love it so far.
If you ever finish, or start on it, I'd love to get a different view at the roof.
