Is there anyway to not have POtATOS? Because if your level has GLaDOS' voice, then having GLaDOS on your Portal Gun seems very strange

Also, that chamber, is there a portal wall on the opposite side of that emancipation grid? If so, i think i know how to solve that, or i could actually use the wall to the left of it

Play it yourself!  Also, there is no way to get rid of it without using a script, I don't think.  I didn't want to get into it.
