Will the old voice actors play the parts, are they just gonna use the conversation stuff from the game, or will they cast new voice actors?

They're getting the original voice actors to voice them, and I'd guess it's new material. so yeah. but in Japenese :c

Don't touch Persona: Trinity Soul, then. That almost ruined Persona 3 for me, and that's one of my favorite games. Seeing as how this is a direct adaptation of it, instead of a spin-off, then it should be fine. Only thing I dislike is that they named the main character "Yuu" instead of "Seta" like in the manga.

Depends which game. I haven't touched Persona 1, I think Persona 2 was about a journalist or something, Persona 3 is about a mysterious tower that appears at this time called the "Dark Hour" which is a hour of time between 12:00 and 12:01 AM. Persona 4 is about a series of murders in which after a rain and foggy day bodies appear on telephone lines.
