Don't over-design, keep it simple.
Oh, and when using gradients, fade between similar colors, like light gray to white.

First off, it's possible to make a perfectly good table-based design without CSS. Secondly, there's no reason for him to learn css for a project like this - a table-based design would work fine.

I've used both Table based and div based designs. They each have advantages and disadvantages. It's not really worth a debate - HTML table-based designs are perfectly good options. In the end, it all comes down to a matter of opinion.
