yeah, filly Twilight was untrained. well read, but not trained.
also, I believe Twilight mentions something about this (baby unicorn unnatural magic superpower or whatever) in the beginning of the episode, though I'll have to re-watch to make sure.

Mr. Cake's has unicorn on his side, and Mrs. Cake has pegasus on her side. (or vice versa, once again I forget and need to re-watch)
simple genetics, like a white mother having a black child because one side had black ancestors.
