Wait what do I do with the one piece of the city kit that isn't on a road plate? It has a roof on one side, and what looks like it's spos'd to be walls or something on the other. I dun get it

The flat wall plate with the two doors? That's for dead ends if you want to just end the road off at a straight away.
I recommend you end your roads onto the beginning of another road. However, I also recommend building your own dead ends.

I designed some roads for my city, they are pretty cool i heard so i am going to post them here soon as a generic building kit.
