Excuse me, but I have a question. How do you get more hats/helmets for you character?

There is no way to have new accessories that you can use anywhere, but there is a hat mod that lets you wear many different kind of hats in your server

There is no default way of doing it. You either need to make them yourself(which is extremely hard to do), or download other people's hats, although there's only...two hatmods so far. I'd prefer Rusty and Munks.
