you don't need to watch the TV series to watch Ultimate
Ultimate is a more direct adaption
the TV series was made during a time where the thing to do for TV series was change stuff around for various reasons, the most common being the manga not being complete yet (see: Rozen Maiden, Yozakura Quartet)
