How do I open the add-ons so I can input the tacknife code in there?

Do you want to put a whole .cs file in, or do you just want to extract it and put a code snippet into the existing .cs file?

First, doubleclick the .zip, and extract it to a folder on your desktop, next, rightclick on the server.cs of the weapon, and press open with>Notepad, finally, put your code into the file. Don't be surprised if it doesn't work, because throwing snippets in willy nilly doesn't work half the time.
