I have done it on one pokemon, it's a lot of work.

Can you EV train all the stats or only one? Also how do you choose what stat to EV train? The lowest one? The highest one?

You can max out the EVs (255 EV points, meaning a stat boost of 63 or 64, not really sure how it's rounded) on two stats, and put like two or something lame like that into another. And you do whichever stats would be most beneficial to that pokemon. Like, a Blissey might want HP EVs so that it can have upwards of 675 HP.

Actually anything over 252 on a stat doesn't increase the stat any more than 252 would. You can have 252 on 2 stats and then have one stat with 4, then you have 2 leftover that wouldn't increase any stat.
