I decided to give Trevenant 52 EVs in SpD rather than maxing out it's Def EV, it puts it's SpD past 100 which sounds a bit better for tanking than full on Def. |

The way you described it was right, however not every Pokemon can learn any move that a Pokemon in it's egg group has. I assume this is for balance because this would mean most Pokemon can get most moves otherwise. |
