Missions aren't exactly quests, they're marked by crossed swords on your map and everyone gets exp for killing it.

Oh, well, I tried killing a boss but I barely do any damage, and he's blue.

That's pretty much the case with bosses for your level, even if they are blue.
Even White bosses have a lot of health.
Try getting a better weapon, or upgrading it. Or come up with a new tactic. Stunning abilities are your friend against bosses, and it's best to time them to stop their power attacks or summoning of other enemies.
Or even getting a pet. And if the enemy isn't killing you, you just need to take the time and persist.
Bosses go a lot quicker on multiplayer simply because there's lots of people fighting them.
Even then they can still be too difficult.

Don't bother with your M2 attack as a Fire Mage with a Wand.
Only use it when your M1 attack unlocks your insta-attack. You'll know that when it plays a sound and your character is wrapped in fire.
When this happens, your next M2 attack is instant and costs 0 Mana.
Which is great, because it has the chance of knocking enemies over.
I also completely forgot to explain that you need a Wand for the fire-ball attacks as a Mage.
A Staff will summon a fire/water tornado.
A wand shoots a ball of fire, and it's M2 is a chain of large fire-balls.
I'm not entirely sure what Bracelets do.
Also, don't stand still for long.
