I'm new to this whole modeling thing and if you could, give me some pointers, what programs to use, sketchup?, how do I get started, packaging, etc...  All that junk :/

Thanks!

Do not use sketchup. You MIGHT finish a model but sketchup can't do joints nor it can export to .dts. Personal tip: Use blender. Its free. Not like this dumb milkshape wich costs $30 and doesnt have only half of blenders features.  http://www.blender.org for a download, there are hundreds of threads about it in these forums. Use 2.62 for modelling and animating, 2.49 for exporting (Lunar will soon post a tutorial about how animating/exporting is done).

You can import into Blender. If you feel more comfortable modeling in sketchup, then by all means. I do not, however, know any really good modelers that use sketchup.

True, true, blender is free. True, true, it has more features. But, Milkshape is undeniably easier to use and can be more efficient since it uses triangles instead of squares (aka 2 triangles) for faces. Also, when I say milkshape is easier to use, I mean it requires practice and Blender is just exceptionally difficult to use especially as a beginner.

As he said above, there are tons of threads / tutorials on modelling on the forums. Blender and Milkshape are the 2 most popular modelling programs for this game, so I would go with whatever looks more appealing to you.
