Right clicking any queueable icon will do this. The game calls it "Overwatch", there are also "pause/resume" and "stop all" buttons for Overwatch next to the minimap.
also lol.
And, if RTS isn't your thing; then stuff, it's not your thing. Unless you're willing to condition and drill yourself into enjoying it, you're going to be walking in stuff. Most players get decent skills within a few weeks of playing, if you're still failing then you're just not fit for RTS.

Stocking's getting me to do Necron because it's apparently there's less to know and manage.

Definitely a lot less. Requisition isn't a resource for Necrons, and instead you get 20% based Time bonuses for every Obelisk on a Strategic Point or Relic. The higher total Time Bonus you have, the faster things will go for you (all because by the game's lore, Necrons rise out of their old-as-stuff tombworlds underneath the ground like lifeless mummies). They use only power, and all units are made from the Monolith (which also becomes a super-heavy but slow fortress once you capture a relic). They can be easily countered with high morale recovering squads/squads with no morale, melee units and vehicles.
