I didn't notice a way to change servers during the beta.

Locked on servers, but you can buy a cheap server transfer thing in the store, or guest on servers to play with your friends.

I'll just have to collaborate with my friends before release.
Hopefully the server you chose for the beta will be wiped clean along with the characters.
