it seems more like youre creating artificial barriers to overcome because you can't overcome the most difficult one in all of league

I say AP Sivir because I've seen it done
Max mana Kat is like the epitome of bad though. The only thing worse I guess would be AP/mana Yasuo, because Kat can still work with either AD or AP.
