Technically you could if you bought space in the data center

You buy space, power and network hookups but you have to actually be there to put computers in for it to be colocation.

Nah, wrong again. Most DCs will let you ship your hardware to them and they will rack it up and cable it, you just have to have prepped it in advance or you will end up paying them a fortune for configuration. You then pay for "remote hands" if you need the DC engineers to work on your hardware. There's no requirement that you ever visit the facility.
