the one about simon turning into the Ice King was the Christmas Special episode.  Where Finn and Jake sit down and watch the Ice King's secret tapes (which mainly consist of the Ice King preforming embarrassing acts in front of the camera, until the very end where it reveals his secret past of him being Simon).  Although when they found out, the Ice King only said "Now you know my secret!  I used to wear glasses!

I don't think Bubblegum is betty, but I can see how you would get that. 
I believe that the Ice King tries to fill the void of his missing wife, Betty by capturing princesses, and that Bubblegum reminds him the most of her
