You can shoot them with with a dart, you can figure out which hole is theres and walk infront of their path to their hole and attack them from here, or you can go out at night with a torch or miners helmet and find sleeping rabbits outside (idk why they don't use their holes to sleep lol)

You need to drop them on the ground and click on them with any weapon/tool equipped.
