1) Brytenwalda. Just turn off all the bullstuff "difficulty" features that make fighting for you hard as hell but leaves the AI as normal as ever.
2) I usually increased my relationship with people by waiting until a war started then jumping in on whatever battles they participated in. Talk to them after it and you'll usually get a couple relationship points.
