Is there a way to remove blood and gore from my game completely?

You can edit the client's config files and set them to read-only to show invisible blood on characters on any server. (Can you?)

I wonder if you could modify the copy of the datablock that your client stores so that it uses an invisible texture or something.

No, it will notice your client's file has a different hash than the one of the server, re-download the server's one and place it in your cache.db
editing that datbloke could probably work though
