Just dig a 2x1 tunnel downwards and never dig directly under yourself

Digging straight down is a terrible idea, even if you don't mine the blocks you're standing on, because you'll need a crapton of ladder to get out.
Instead, do something like this:
Before you do that, though, raise the ceiling in your shelter to three blocks tall; right now it just feel too cramped.

You mine out all the other coal and raise the roof. You gain another level!
You also craft a shovel and an axe.
