Windows 7 is fine to host a Blockland server. Windows Server 2008 I think is out of the question, there's no need to spend that much on an OS just to run a Blockland server (that is if OP is solely hosting a BL server).

Id say go with Linux right now. CentOS is VERY secure out of the box, however they have older versions of programs/packages (more stable though) and to add wine on CentOS you need to either add a repository RPMForge or the Fedora Extras repository. If that bothers you pick another distro such as Debian 7. It has Wine in the repositories already. Debian 7 isn't as secure out of the box but you can always set up more security on it, the same with any linux distro.

Windows Server 2008 is very stable, RTBs NY01 node is running at about 220 days uptime with no issues at all, surprised me really.

Wow, that's nice. (Not being sarcastic, I read this over and was like...I sound like a douche lol)
See that's one of the things I never understand when people say how like Windows Server 2008 isn't stable or crashes a lot or like why Linux is used in datacenters or something because for some reason they are more "stable", is this all just a lie like how macs are better for 3d programs and designing and crap?

You can close explorer and pretty much ever other program on windows except network services, wininit, winlogon etc.
