| Linux Centos dedicated server? |

You'd need to have a desktop environment installed for Wine (not sure anymore, last time I tried to install Wine 1.4 I had to install GNOME 2,) but yeah, you can. |

You can through Wine yes. Just use Openbox since you still need a graphical environment. |

Or GNOME 2, after you set up your hard drives, root password etc, it'll ask you for a category of install, make sure to select Desktop, that gives you the require desktop enviornment and then you can add on individually from there such as openSSH so you can SSH into your server (it's like Remote Desktop but the command line). |

Gnome 2 isn't maintained anymore. |
