How do you deactivate add-ons through console?

Unless the add-on is specifically written to be deactivated during play then it won't be possible.

Yep. Also Visolator told me that deactivating some add-ons while hosting can lead your server to crash

It is actually deactivatepackage(packageHere); The package is required to exist.
