if you go with the BoS, which I think will end up being the canon ending, they end up having pretty much unchallenged dominance over the entire east coast. The BoS in NV got dunked hard and with so many endings involving wiping out that bunker it can be assumed that the NV chapter is dead. It's not too far of a stretch that if the NCR gets control of the dam or at the very least gets the legion to forget off that they will blitz the last bastion of the BoS in California and win, giving them nominal control of the West. Logically both factions would want to expand inland. If they both did, the point where they meet would most likely end up being along the Mississippi, specifically Chicago. A showdown there would be cool as forget, especially since its stated that the Midwestern brotherhood went even more AWOL than the east coast brotherhood. It's also stated at least once with ED-Es questline that the enclave also had at least a small hidden base there.

maybe it's just wishful thinking since I want a Midwestern fallout badly

isn't the enclave in chicago?

I personally don't mind that too much, because the storyline of the games never really revolve around this.
It's just a theme in the background, an explanation for why America was like it was when the bombs fell.

Playing through the last three games, I've never felt that American Consumerism is a significant aspect of what I am seeing/doing at the time.
And as far as Vault-Tec goes, I feel like there's nothing new for me to discover. I enjoy Vault-Tec and the vaults, but I know their background, and that things weren't as they seem.

I wouldn't mind seeing the Chinese communist alternatives, which surely there were similarities.
Enough so to maintain the core gameplay and style we've been used to. Plus, there would be American aspects too, since they were in a war with each other, and Americans landed in China, and even took some cities prior to the bombs falling.
