Bend her over the desk and forget her (she sounds like she needs somthing to chill), and have someone tell the principle she wants to see him. (class A plan going on here)
Personally I would record one of her rants, and go to the principle with it.

put a bunch of empty bottles of alcohol in her desk, that way when she opens it (possible during the middle of class) everyone will think she is an alcoholic

even better, if there is a teacher with her they might open her desk and see all the bottles.
