sorbet and sherbet are distinct and different things. sherbet is ice cream, sorbet is ice.

Soft serve isn't necessarily custard, it's softer because it has more air whipped into it
And custard isn't necessarily soft, either

You could also specify frozen custard, as just like yogurt, it's not necessarily frozen
