You can use add-ons in the demo version, but you will still have the brick limit to deal with. I suggest you get the full game.

When I had the demo version, I could add maps.

He most likely didn't turn them on. Just adding them doesn't put them into the game, you need to CHECK them in the add-ons when start a new game.
