In game there were specific points to which the hookshot could latch.
maybe have another that would only latch on to specific bricks? (no idea how that would work)

or even similar to the portal gun, there are bricks that you cannot grapple to.

I made a pack of Anti-Portal Bricks for use with the Portal Gun. It's available here.

But anyway, placeable anti-hookshot bricks would work well. Maybe make the hook "stick" in the wall until you reach it or die, sort of like the Bow?
