However you cannot pick something higher than your current age.
You keep all stats except the ones gained from aging and leveling up.
You keep all skills and items. (However sometimes it'll be a douche on you, give you starer crap equipped, stuffing up your inventory, and even giving you a time limit to organize your inventory to get your old stuff.
