Another way of building?

I notice when some people build epic things, they don't need a baseplate (they can just build it wherever) and they get cool things like doors. And other starter maps to build in...
Am I missing something here? How do I get those things?

Oh, so you just download and use, I'm guessing.
But what about building? Some people get it done fast and efficiently. Do you go to "Start A Game" and start building in one of those with the baseplate (which I hate) or is there another way? Most of the time I don't want to use a baseplate and I find it rather annoying for my character to drive a jeep around wherever I want to go.
