What is a good amount of vertices for a model in blockland?

There is no good amount of vertices

Just make a model and if you see a vertices, that you don't need, delete it

Vertices do not have much of an effect on gameplay, Faces do however. Trim off any un-seen faces, like those found completely inside other meshes and the like.
