How do I change the target of a start menu thing?

Are you too lazy to find the other word processing programs link and click it?

I mean, I wanna change the DEFAULT programs. So it seems like the new program is my default. I'm trying to clone a different OS. So I want to make the default MS accessories into new programs to make it seem like I have that OS.
