Switch between spells could be done, because the portal gun can switch between modes too.

More then 2 spells could be possible, yes.
I am sure that can be done.

That would need you to add an animation to the models. You can start and stop animations by script but not make new ones.

The Portal Gun switches to a limited 'Pickup' mode by the Light key, based off the Gravity Gun.
