Dangerous Waters by SCS
It's a little old, but the Reinforced Alert mod is pretty fun once you get it installed.
The game by default lets you control like 4 US and Russian subs, a surface class frigate, a P-3 Orion, and a MH-60 variant or something. It's a lot of fun with some pretty cool technical aspects in terms of station operation in the vehicles.

I just would really wish there could be more updates and additions like binding keys to various things and other particulars involving specific functions that would improve efficiency and such.

Most do nowadays at least. Even the one I had from 10 years ago did.
I would hope that at some point in the future improvements to electric stove technology could be made more prevalent so that some of the present issues could be ironed out
